Soupe Paysanne au Brocoli

featured_brocoli_soup_webThis recipe features a creamy finish without the need for cream or milk.  Cover with grated old cheddar to give the soup that extra kick!

Ingredients

  • 18 ounces (500-575 g) of chopped broccoli
  • 11 ounces (300 g) of chopped potatoes
  • 1 tablespoon (15 ml) of oil
  • 1 tablespoon (15 ml) of butter
  • 4 ounces (115 g) of onions
  • 1 clove (5-10 g) of garlic
  • 30 fluid ounces (900 ml) of chicken broth
  • ½ teaspoon (2.5 ml) of pepper
  • ½ teaspoon (2.5 ml) of cumin
  • ¼ cup (60 ml) of grated old cheddar (per person)

Preparation

  1. Over medium heat add oil and butter. Heat until the butter has melted.
  2. Add onions and garlic, sauté until the onions are transparent.
  3. Add broth, broccoli, potatoes, pepper and cumin then stir.
  4. Bring to a boil then drop to low heat to simmer.  Stir occasionally for about 25 minutes or until potatoes easily break apart.
  5. Remove from heat for 5 to 10 minutes to cool. Use a blender or mixer to break-down broccoli and potatoes until you have a creamy finish.
  6. Heat on low until soup is hot.
  7. Pour into a bowl, cover in grated cheese and ready to serve. Makes about six bowls.

Sausage and Broccoli Casserole

An easy to prepare dish which can be done on short notice. My child refers to this meal as her favourite supper, mind you she has never asked for proper name. A combination of Italian sausage, broccoli and egg noodles it creates a read-to-serve meal which has loads of flavour.

Ingredients

  • 14 fluid ounces (410 ml) of Alfredo sauce
  • ⅓ cup (80 ml) of milk
  • 1 pound (450 g) of uncooked Italian sausage
  • 9 ounces (270 g) of chopped broccoli florets
  • 8 ounces (225 g) of egg noodles
  • 1 cup (235 ml) of shredded Mozzarella cheese
  • ¼ cup (60 ml) of roasted red peppers

Preparation

  1. Preheat oven to 350°F (175°C).
  2. Prepare egg noodles as per package instructions.
  3. Oil up a large pan then place over medium heat.  Take thawed Italian sausage, slice open casing then pour the contents into the pan.  Breakup and fry until cooked, drain then set aside.
  4. In a large bowl, combine Alfredo, milk, sausage, broccoli, ½ cup (120 ml) of cheese and roasted red peppers.
  5. Oil a baking dish, spread contents of bowl evenly inside then sprinkle with remaining cheese.
  6. Bake for 30 minutes or until top is bubbly and the cheese is lightly browned.

Nouilles Chinoise

Nouilles_ChinoiseApparently when the Chinese immigrated to North-America, they used the raw ingredients available to them.  Hence Chinese food that is often served here differs from what we find in China today.

This French Canadian meal is such a variant. This meal is easy make and an excellent way to change things up when you have leftover rotisserie chicken or pork.  Simply cook up, mix and you are done!

Ingredients

  • 1½ cup (355 ml) of fusilli
  • 4 oz (115 g) of broccoli
  • ¼ cup (60 ml) of chopped fine onions
  • 2 crushed garlic cloves
  • 5 oz (145 g) of coarse chopped chicken or pork
  • 2 tablespoons (30 ml) of soy sauce
  • ½ teaspoon (1.25 ml) of pepper

Preparation

  1. Cook pasta as per package directions, drain then set aside.
  2. Thaw broccoli (if required) then cut into smaller pieces.
  3. Oil saucepan then heat on medium-high.  Place onions and garlic and cook until the onions are ready.
  4. Add broccoli and chicken pieces until heated throughout.
  5. Add in the noodles then soy sauce.  Stir noodles have been consistently coated in soy sauce.  Keep stirring until heated throughout then ready to serve.
